Ingredients for 4 servings
500 g waxy potatoes /// 800 g carrots /// 1 bunch of chives /// 3 eggs /// 2 small cups of yogurt /// parsley, dill, or other seasonal herbs /// salt, pepper, and curry powder
• Peel the potatoes and carrots and grate them coarsely.
• Add the chives, cut into small rings.
• Finally mix in the eggs and season to taste. If needed, add one tablespoon of flour.
• Heat oil in a pan and fry the small patties until crisp. About five minutes, and not over too high a heat!
• In the meantime, chop the herbs and mix them with the yogurt, salt, and pepper.
• Serve with a green salad. \\\
